Rendang Ayam

Ingredients


3 cloves Star anises

3 pcs Cardamom

3 Pcs Cloves

1 stick Cinnamon stick

2 cm Turmeric

3 cm Ginger

3 Garlic clove(s)

7 Shallot(s)

5 Chilli peppers (fresh)

3 cm galangal

4 tbsp Oil

500 gr Chicken

1 tsp coriander powder

500 ml coconut milk

2 tsp palm sugar/ brown Sugar

1⁄2 tbsp Salt

2 tbsp Kerisik (Paste of roasted grated coconut)

1⁄2 cup Water



How to Cook :

1. Put the ingredients into your food processor or blender following

Shallots, garlic, chillies, turmeric, ginger, coriander (seeds) and blend it until it became paste .


2. Put 4 tbs oil into pot and sauté the paste until it fragnant , put in the bay leaf, cloves, cinnamon stick, star anise into the sauted paste, and the choice of your meat .

Stir 5 mins and add the water let it simmer for 20 mins on low fire.


3. After 20 mins or so, put in the coconut milk, palm sugar and salt.

Cook it until all the juice evaporate and the coconut milk realise its oil (3-5 hours, depend on your choice of your meat).


4. put in the kerisik 10 mins before you turn off the fire.
